Cute lil' cupcake

So today my good friend Andrea and I decided we wanted to just start our blog early and try this very unique recipe I found on Annie's Eats: Cherry Coke Cupcakes! Yeah, weird, I know... but trust me, they're pretty awesome.

Yay, making cupcakes is fun!

After rushing to my house and divvying out each of our own share of ingredients to obtain, we set out to the grocery store... only to forget the darn buttermilk. Stupid buttermilk. I swear, as Andrea said before, our baking/cooking escapades always end with her driving all over the place constantly! Poor Andrea... poor car. D: But, I guess it was worth it in the end! The cupcakes were quick and easy to make... plus, they're so cute too!

Even though we followed the recipe and everything, we still ended up with a ton left! Seriously, look at that! There's like two and a half cups of that left in there...

Holy crabbapples, that's delicious!! Okay, so you can't really taste the coke; it's sort of a pleasant, subtle aftertaste. So don't worry about that if the fact that these are 'coke' cupcakes freaks you out. It really just tastes like a really, really good chocolate-ish cupcake! Just, you can taste the coke -- it's there -- it's what makes it pop, you know? The cherry in the middle makes it really yummy, too! Like a truffle... <3

Today after school Cathy and I decided to have another baking day. Cathy had brought me some amazing recipes earlier and I really wanted to try the Cherry Coke Cupcakes. Like immediately. And let me say that Cathy is one great recipe picker. These were so good! When I first saw them, honestly, I wasn't expecting much in taste, just that they'd be fun to make. And they were! Pretty quick too! Oh my gosh though, just like all of our recipes, it took like a million trips to the store and my house for ingredients. But that's all just a part of the adventure :) Personally, I think my favorite part was making the whipped cream frosting. Yum! I never think whipped cream is going to turn out right, and it always does. The glaze was quite tasty too. I think the coke added quite a bit even though I couldn't quite taste it. The cake was really moist and rich, but not too rich! It was a pretty easy recipe, and I can't think of too many tips except maybe to double the recipe like we did. Saturday Cathy and I made Triple Chocolate Mousse Cake. It was pretty fun and it looked awesome. It was kind of time consuming though. We started about twelve-thirty and ended around four-thirty. It was so time consuming that I had to leave before it was done setting, but Cathy, being amazing and all, saved me a TON!

We were all set up for a day of berry picking and jam making but it's been raining like crazy down here. Thankfully, Cathy saved the day with her wonderful baking plans. Thanks Cathy!!

Maybe Cathy will help me add more to the mousse cake description later??
