Today after school Cathy and I decided to have another baking day. Cathy had brought me some amazing recipes earlier and I really wanted to try the Cherry Coke Cupcakes. Like immediately. And let me say that Cathy is one great recipe picker. These were so good! When I first saw them, honestly, I wasn't expecting much in taste, just that they'd be fun to make. And they were! Pretty quick too! Oh my gosh though, just like all of our recipes, it took like a million trips to the store and my house for ingredients. But that's all just a part of the adventure :) Personally, I think my favorite part was making the whipped cream frosting. Yum! I never think whipped cream is going to turn out right, and it always does. The glaze was quite tasty too. I think the coke added quite a bit even though I couldn't quite taste it. The cake was really moist and rich, but not too rich! It was a pretty easy recipe, and I can't think of too many tips except maybe to double the recipe like we did.
